Chocolate swiss rolls


I found out this recipe in a magazine and just changed it a little bit . This was my first attempt at making these rolls. My son just loved it....

INGREDIENTS:
3/4 cup all-purpose flour
1/3 cup cocoa powder
1 tsp baking powder
4 eggs 3/4 cup granulated sugar
2 tsp vanilla extract
2 cups whipped cream


DIRECTIONS:
1. Stir together flour, cocoa powder, baking powder. In a large bowl, beat the eggs until very light yellow. Add granulated sugar beating until smooth. Then add vanilla extract.
2. Fold flour mixture into egg mixture till smooth without lumps. Pour into 15x10x1 inch jelly roll pan lined with sprayed wax paper. Bake at 350 degrees F for 10-12 minutes.

3. Take a clean kitchen towel. Invert the cake on it almost immediately. Roll up the towel and cake from short end and let it cool.

4. Unroll after cooling, trim any hard edges of the cake. Spread the whipped cream to within 1 inch of the borders. Reroll the cake without towel. Wrap in plastic wrap and store in refrigerator for 2-3 hours. Cut out into rolls before serving it..

Baby Shoes Cake


I made this cake for a friend's baby shower..I was searching for the baby shower cake designs when I came across this one on a website and found it very different and interesting. As my friend had not found out if its a boy or girl, I just decided to make the cake with blue as well as pink color.


BASIC CAKE:
Follow the recipe for vanilla cake in the blog. You will need one 9 inch x 2 inch square cake and 3 cupcakes for this cake.

FROSTING:
Whipped cream frosting

DECORATING THE CAKE:
The baby shoes are made from 3 cupcakes, 1 1/2 cupcake for each shoe. First take one cup cake and divide it into half vertically and keep aside. You will need this for the front part of the shoe. Now take another cupcake and cut off the dome over it. After doing this carve a small round not very deep inside the cupcake. Then place this on the cake and frost it all over. Then take the 1/2 cupcake and stick it using the frosting as the glue to the front side of the cupcake. Frost this half cupcake too. Then after you have frosted the shoe completely just pipe out the design on the sides only of the shoe with the color you want. Then place the googly eyes and pipe out a small ribbon in the center of the shoe. Repeat it for the other shoe too!!

Cindrella Cake


I made this cake for my wonderful friend's daughter's birthday. I came across it when I was searching for it on the web. I just made some changes from my side during decorating the cake and made this creation...

BASIC CAKE:
Strawberry cake (2 Betty Crocker's Strawberry cake mix)

FROSTING AND FILLING:
Use Whipped Cream

Pineapple Cake


I made this cake for a special friend's surprise birthday party..I was glad that everybody loved it so much and relished on it!! I just found this recipe on some site on the internet and tried it out.


INGREDIENTS:
2 large eggs
2 cups granulated sugar
1/2 teaspoon salt
2 teaspoon baking soda
1 teaspoon vanilla extract
2 cups all-purpose flour
1 (20 oz) can crushed pineapple with juice (Use about 3/4 quantity for cake and leave 1/4 quantity for filling)

DIRECTIONS:
Combine eggs and sugar and beat it till fluffy; add remaining ingredients including 3/4 of the can of crushed pineapple with juice and mix well. Bake in 9 X 2 inch heart shaped cake pan (2 cakes) and bake for 30-35 minutes at 350 degrees F or till the toothpick inserted comes out clean.

DECORATING THE CAKE:
Level both the cakes by cutting out the domes. Take one cake with and spread the whipped cream on top of it. Then put the remaining 1/4 quantity of the pineapple along with its juice over the cream. Place the other cake upside down on this. Frost the whole cake with white whipped cream. Then decorate it with pineapple slices and cherries on top of it.

My son loved this cake when I made it for a birthday...Its just easy to make and comes out perfect..
